My First Run At Risotto!

The other day I made my very first risotto! It was hearty, sweet, and savory. It surprised me in all the right ways and left me feeling more confident then ever about getting messy in the kitchen.

Peter's reaction to the dish surprised me the most....




As someone who has an aversion to soft rice, he still really enjoyed the meal! His personal favorite: The kick in the risotto and the way the pickled salad helped balance the meal.

To make the risotto,  I partnered with my friends over at Blue Apron once again.   2. I keep hearing about Blue Apron--I feel like it isn't for me and my lifestyle BUT I know a lot of people that it would work for and I love that a service like this exists for them!
    I have never made risoto but it's one of my favorite dishes when we go out to eat. I'm so intimidated by it! How brilliant to pair a pickled salad with it to bring balance!

    1. I totally hear you, I thought it wasn't for me and still underestimate how great it is right before the package arrives and then I'm like oh crap.. this is awesome! I was also so intimidated by it! I am still nervous if I made it correct, it seems like such a particular dish, but we loved it!
